A hearty jambalaya made with pork loin, smoked sausage, and tasso, combined with rice, vegetables, and flavorful seasonings. This dish is cooked slowly to develop rich flavors.
Cut the pork loin into bite-sized pieces. Season with your preferred spices. Heat oil in a large pot and add 1/2 stick of butter to brown the pork for about 10 minutes. Remove and set aside.
Slice the sausage and cube the tasso. Add them to the pot with a bit more oil and brown. Remove and set aside.
Dice the onion, bell peppers, and celery. Sauté them in butter on medium heat for 45 minutes. Add minced garlic and sauté for another minute.
Stir in the beef bouillon and add rice and water. Return the meat to the pot, stir, and bring to a boil. Once boiling, cook uncovered for 10 minutes.
Cover with a lid slightly ajar and cook on low heat until the rice is done (35-45 minutes).
 Serve!
