A flavorful dish of country-style pork ribs seasoned with Cajun spices and served over rice with a rich gravy made from sautéed vegetables, garlic, and a touch of beef bouillon paste.
In a large pot, put the oil to gettin hot. Season the ribs WELL with cajun seasoning & dried mustard. Sear the ribs, in batches, in the hot oil on medium heat. Sear on both sides until nice & browned. Remove & repeat til they’re all done. Then remove & set aside.
While those sear, dice the onion, bell peppers, & celery. In the same pot you seared the ribs in, melt the butter. Add the veggies & saute for about 45 minutes on medium heat.
Then stir in the bouillon paste, garlic, & flour. Cook, stirring often, on medium-ish heat for about 5 minutes.
Add the pork ribs back in & cover with ice or water. Put the lid on your pot with a little crack in it and bring to a low boil. Simmer for several hours (about 4).
 Serve over rice!
