Crispy fried potato wedges, effectively giant french fries, are made from large russet potatoes and a variety of flavorful dredges, served with a tasty dipping sauce.
Wash potatoes and cut into wedges. Drop into an ice bath for at least an hour but up to 8 hours.
When ready to cook, rinse until the water runs clear. Bring a large pot of salted water to a boil and cook the wedges for 4 minutes. Drain and set into the fridge to cool.
In a bowl, combine the milk and egg; then season well. In a second bowl, combine the flour and cornstarch and season well. Heat a pot or deep fryer of oil until 350 degrees F.
Dip the wedges into the milk/egg and then into the flour/cornstarch & repeat. Place onto a wire rack and let sit for 10 minutes.
Fry until golden brown and drain on a wire rack.
 Serve hot with dipping sauce!
To make the sauce: Combine all the ingredients in a bowl and let sit in the fridge for a half hour before serving.
