A delicious Shito Pepper Pasta made with fresh ingredients like shishito peppers, garlic, heavy cream, and pasta flour. Perfect for a meal that brings a bit of heat and flavor.
In a flat surface or in a mixer, combine the flour & eggs. Knead until it’s a smooth ball. Rest for 30 minutes.
Remove the stems from the peppers, and add to a bowl with the smashed garlic. Toss with avocado oil. Add a hefty pinch of salt and fresh black pepper. Saute in a skillet on medium heat until the peppers begin to blister - 10-15 minutes.
Add that to a food processor and blend. Set aside. Melt the butter in your skillet and saute the onion on medium heat for about 10 minutes.
Roll out your pasta dough & cut into whatever shape you prefer (fettuccine is suggested). Bring a large pot of salted water to a boil & cook your pasta.
Add the heavy cream, peppers, garlic to the sautéed onion. Season with red pepper flakes & salt if needed. Simmer until it thickens slightly.
Drain the pasta & save about a half cup of pasta water. Pour the pasta & water into your sauce and stir together.
Serve topped with more red pepper & parmesan!
